it's oh so good to be back...

Adam and I have been talking about a specific vacation with just the two of us for quite some time...and just a few months ago Adam surprised me with getting us plane tickets to LA...where we'd take off on a cruise!! :)
That's where we've been this past week...at sea, escaping Utah's chilly winter and visiting Mexico's beautiful and sunny cities of Cabo San Lucas, Puerto Vallarta, and Mazatlan.
{relaxing on a lovely little beach in Puerto Vallarta}

Brooks stayed with Grandma Kjar for a few days, our good friend Penny for one night, and his Grandma Stum (my mom) came into town to stay with him the last few days. They are all ANGELS to watch out sweet Brooks.
And let me tell you,
I have never missed a human being so much as I missed my boy. On the cruise, Adam and I talked about how we knew we'd miss him immensely, but we were surprised (especially me) by how much we really felt that we were missing a part of us. Honestly, it was hard to fully enjoy the first couple days...I drove Adam Ca-Razy by wanting to check my email (news about Brooks from Grandma K) about 25 [thousand] times a day.
But overall, Adam and I soaked up some wonderful R-and-R time together...and enjoyed every minute of it being just the 2 of us. I LOVE THAT MAN!...and I was reminded constantly of why he makes me the luckiest girl in the world.

But it is SO GOOD to be back with this little guy...
{picture of Brooks my Mom sent me while on the cruise}

Can't wait to record the rest of our trip! But for now, unpacking and doing loads upon loads of laundry are at the top of the list...right below catching up on my snuggles with Brooks!!! :)

PS - that little sore on Brooks' right cheek is a patch of eczima :( Do any of you Moms have little secrets of how to get it healed up??

4th of July EVE Picnic :)

I planned a little surprise picnic just for me & my sweetheart :) ...he had no clue...bahahaha!
(i never get away with surprises for Adam, so i was pretty happy)

I made little tuna fish crescent sandwiches and got grapes, cheese, club crackers, strawberries, & of course some bubbly :)

We had a delightful time at the park!
(which is just a few blocks from our house:)
* Here's Adam, cutting the cheese. heehee ;) *

First you've got to pour the bubbly...
...then drink up! Don't forget the pinky ;)
I have bought some sparklers a few days earlier...so we had some fun with those after we filled our bellies.
Happy 4th of July EVE!!!!
We're madly in LOVE...with picnics, reeeeallllly good cheese, sparklers, but most of all each other.

Heavenly Pizza

Today Adam & I went out to lunch at the Gateway in Salt Lake...
"...where to go?" we said.

Where
to
go?

We decided on California Pizza Kitchen :)
Adam's favorite type of pizza is BBQ chicken...so that's what he got :)
I, on the other hand, am always incredibly indecisive when it comes to new restaurants (we've never been to Cal. Pizza Kitchen) So, i asked our server and he highly recommended the Pear & Gorganzola pizza...he says I need to like strong cheeses, which I do, so you can guess what I ordered...
To say that it was delicious is an understatement...
...to say it's flavors complimented each other PERFECTLY is an understatement...
...to say it makes my tummy rumble just thinking about it, is a huge understatement.

Let's just put it this way...I planned on using a doggy-bag.
But, this is what happens when you combine caramelized pears, Gorgonzola, Fontina & Mozzarella cheeses, caramelized sweet onions, chopped hazelnuts, topped with field greens tossed in a delish Gorgonzola ranch dressing.
I can only describe it as heavenly :)

And heavenly pizza does not last very long on my plate.

Nacho Surprise & UP

Last night on my way home from the gym I decided to give the hubby a call :)
He just happened to be on his way home too...woohoo!
I said:
"What should we have for dinner tonight lover?"
He said:
"Anything sounds good."
I said:
"Well, I could drop by the store & grab some peppers & mushrooms & we could use the chicken we have to make some BBQ cabobs...Or we could have some pasta & veggies...Or we could have the left over chicken cattiatore from last night that you also had for lunch today?" (I say the last part with a sarcastic giggle)
He said:
"The left overs sounds great!" (is he amazing or what??)
I said:
"I can most definitely deal with that...See you in a bit babe! I love you!!!!"
He said:
"Love you more."

...I get home about 15 minutes before he & his hott bod walk in the door. He tells me he's had a pretty lloooooooonnngg day at work...his company is moving locations (big upgrade! I'm excited for him!) & the new place doesn't have AC running quite yet...so moving lots of boxes & furniture & having meetings in an 80 degree building kind of took it out of him :( He just wanted a night to relax...like I said before, I can deal with that! And before I know it, he pulls a few grocery bags from behind his back...full of surprise treats for the our fun & relaxing night! In the sacks were a couple bags or tortilla chips, cheese dip, sweet & spicy salsa, & blueberry muffins for breakfast (which we enjoyed this morning)....honestly, I would've gone straight to the ice-cream isle for my treat...but his choices were pretty darn tasty! And since our house isn't much better than his office (our AC needs to be fixed, *sigh*)...He then said he wanted to go see a movie, in the cool (temperature) movie theater...3rd time of the night: I can deal with that!! It was almost 8 by then...(yes, we eat dinner a lot later than we probably should)...and the movie UP was playing at 8:50...perfect. We had just enough time to gobble down some quick nachos, and get some snacks ready to smuggle in the theater (there is no chance I'm going to let the movie theater rob me with their outrageous prices for food!)...we popped some popcorn, put it in a zip-lock, Adam grabbed some peanut M&M's & I grabbed some gummi life savers (candies from our cubscout treat bowl, haha)...We put everything in one of my "Mary Poppins" purses (as the hubby always likes to call them) and we head off to a night at the theater :)

The movie was awesome!!! It honestly made me feel every emotion in the book!...watch it and you'll see =) It had some really great morals that Adam & I talked about on the way home...it was one of those movies that make you smile from ear to ear after you watch it... :)

PS - You can see the movie in 3-D!!! I love technology =)

ONE

Adam and I celebrated our 1-Year Anniversary this past Sunday :)
It's crazy how fast time can slip through our fingers...and it makes me SO happy to know that, while this year did fly by, we enjoyed every moment together. Adam & I started it out right...in the Salt Lake City Temple with family & friends that we love so much. And since that day, we've loved being able to wake up next to each other every morning, we've learned how to communicate better with each other, we've had differing opinions, we've laughed & we've cried together (at the same time on more than one occassion), we've prayed together, we've sought advice from each other, we've read to each other, we've bought a home together, we've served in the Cub Scouts together (kinda), we've traveled together, we've enjoyed numerous sushi dinners/lunches together, we've danced in the kitchen to candle light, we've enjoyed watching DVD's on our laptops in bed (due to lack of TV, which we like), we've taken millions & billions (okay, maybe not quite) of photos to capture our memories, we've grown in love with each other more each day...we've been blessed.
I'm so, So, SO grateful for my sweet husband. He is the world to me...I thank my Heavenly Father for him in each of my prayers. How I got so lucky to get him, I still have yet to find out ;) He helps me want to be my best. He's my prince charming!!! I feel like a princess as his wife. And I know, from how he treats me & our families, he's going to be an absolutely AWESOME father to our [future] children...those little kiddies are going to have the best Daddy-o on the block!...no, in the world! =)
We look forward to the rest of our life together...and the rest of forever :)

...AnNiVErSary CeLeBRaTiOn...

Here's what we did on Sunday, and mostly Monday, to celebrate the best year of our lives so far!!

Sunday morning Adam was SO stinkin' sweet to make me breakfast in bed :)

(but for the record...what actually happened was that I woke up with my hubby MIA, so I walked into the kitchen, I could hear he was up to something. I found him, oh so sweetly, making me breakfast. "You're supposed to still be asleep sweetheart," he says... "It's okay," I reply, "let's make it together!" "No, no no! You get back to bed, and I'll bring it into you." So, I float back to our bedroom with thoughts of how I am the luckiest girl in the world. I then proceed to fold laundry on the bed while listened to conference talks :] Soon after, we enjoy the yummy breakfast Adam prepared!...which included french toast with Nutella --> to...die...for...)

On Monday, I planned a few surprises for my hubby... :)

* Yea for bring married for 1 whole year!!! woohoo! *

We went out for sushi at Happy SumAlign Centero in Salt Lake's Gateway...we sat out side in the perfectly sunny weather and enjoyed our delicious sushi =)

* Chopstick-teeth is always a winner...Yeah for being dorks in a public setting!!! *

And guess who we saw while we were out to lunch?????...the one, the only...John Schmidt!! He was out to lunch with his wife =)

(here's a link to an awesome video of him playing his version of Taylor Swift's "Love Story" mixed with Cold Play's "Viva la Vida"...awesome)

* By the time i thought to use my paparazzi skills, he was walking away...but i got a picture of the back of his cute little red head! heehee *

Next on the mystery agenda was to head over to Liberty Park & ride the ferris wheel (yep, the one from the movie Charly...and I'll admit it's one of my favorite movies...so it was a pretty big deal to be riding it with my forever sweetheart)And for entertainment purposes...look for the difference in the next 2 picutres... ;)
* sigh...blinking pictures...gotta love 'em *

* look at those eyes!! makes me melt... *

* kisses...kisses...can't get enough ;) *

* the sun was so cozy...oh, and i was wrapped up in the arms of my best friend *

* The ferris wheel seat in front of us was #1!...again, yeah for 1 year!! *

After the perfect ferris wheel ride, we went on a little stroll around the park...holding hands, of course =)

We saw these two cute little girls... * Why this picture rocks: the grown-up tricycle, the younger sister in the basket, they both have blonde dreads, & she's wearing pink camo pants *

While wandering Liberty Park, we happened upon a group of super nice hippies that were selling tie-die blankets, shirts, tanktops, & dresses...they had some pretty sweet jewelry & some hand-made sandals (i wanted a pair, but my not-so-dainty feetsies wouldn't fit)...

And being that it was Memorial Day, I found it quite fitting that Liberty Park has this monument...it says "For Those Who Served in the World Wars." We're grateful for those who've lost their lives fighting for our freedom. After the park, we were off to our surprise dinner appointment...which Adam figured out pretty quick...we had reservations at 7 but we had to leave at 6 to get there... ;) We were heading to Midway, which is where we stayed for our honeymoon last May, at the Homestead Resort :) One of the restaurants we ate at on our honeymoon was the Blue Boar Inn...European fine-dining, with such a unique atmostphere. It was so fun to be back there!
We decided our first course would be a delicious salad...and escargot!!!! * My first escargot experience...very unique, and surprisingly really delicious! *

The dinner was absolutely divine...and it's always better when you're sharing it with your other half :)

We had a wonderful time celebrating our first anniversary together!! Here's to many, many more! I love you Adam!!!!

PS - We really wanted to get away for a night in Park City...but instead, we decided to save that $$ to buy a picture of the Salt Lake Temple for our home :) We went by Deseret Book on our way to sushi and found this gorgeous piece...we'll keep shopping around 'til we find "the one"...can't wait to have it up in our front room! Does anyone have suggestions for places that sell church artwork for a good price??
