Pecan Crusted Salmon

Yesterday while Brooks and I joined Adam for lunch at work (what a treat!) I asked him the infamous question, "What are you in mood to have for dinner tonight?" He thought for a minute...then said, "Fish sounds really good." AWESOME! I had something to run with...thank goodness, because I couldn't think of a.n.y.t.h.i.n.g. I used my handy-dandy Allrecipes app on my phone (seriously one of my favorite apps...check it out here:) And I found this recipe. I adjusted it a bit, my recipe is below, and it turned out delicious!! As in, Adam practically pulled a "What About Bob?" moment at the table. Watch this and you'll see what I mean ;) lol.

The best part?? It was EASY. Yet tasted gourmet ;)

Pecan Crusted Salmon

INGREDIENTS:
3 Tablespoons Dijon mustard
3 Tablespoons butter, melted
1-1/2 Tablespoons honey
1/2 cup crushed Ritz/Club crackers
1/2 cup finely chopped pecans (but not minced)
3 teaspoons chopped fresh parsley
6 (4 ounce) fillets salmon
salt and pepper to taste
6 lemon wedges (optional)

DIRECTIONS:
Preheat the oven to 400 degrees F (200 degrees C). In a small bowl, mix together the mustard, butter, and honey. Season each salmon fillet with salt and pepper. Place on a lightly greased baking sheet. Brush with mustard-honey mixture. Place in fridge for about an hour to let marinate. While the fish is marinating, in another bowl, mix together the bread crumbs, pecans, and parsley. Take the pan of fish out of the fridge, and cover the top of each fillet with cracker crumb mixture. Bake for 10 minutes per inch of thickness, measured at thickest part, or until salmon just flakes when tested with a fork. You may serve garnished with lemon wedges. Bon appetit!

Oh my gosh.. YUM! I'll have to try this for sure! I wonder if it would taste just as good on tilapia??

So I have this talent of being able to look at recipes and memorize the ingredients just by perusing them once.. Is that weird? I've toootally filed this in the back of my mind and intend on making it once my schedule settles down... Looks amazing! And better yet, I have all the ingredients ready! I hate when I have to go to the store to buy an ingredient I don't have and will never use again other than one particular recipe.. Know what I mean? Grrr.. lol

I won't lie....I'm not a salmon fan, but oh boy! This looks absolutely delicious! Hubby would be in Heaven if I made this for him. :)
