I love me a good pasta dish :) Especially one that's hearty and full of vegetables. Last night I whipped up a dinner I hadn't made in quite a while...it's easy, made with fresh ingredients, and incredibly satisfying. The nice thing is that it can be made with all sorts of vegetables (not just the ones I use), and it doesn't need to have chicken. When I think of summer, I think of fresh produce...and this meal has just that :)
slice zucchini & yellow summer squash...wash mushrooms (mine were pre-sliced:)

YUM!! I don't know why I haven't thought of throwing in fresh veggies with our pasta! I'll definitely be whipping this recipe up!

I love it! I just made spaghetti sauce today! I used a can crushed tomatoes, a can fire roasted tomatoes, and a can of tomatoe paste. I added ground chicken, bell peppers, onions, brown sugar, and honey! It's SO good! I'm going to post it tomorrow I think! But what a great idea to just add the veggies to the sauce!
